Required Tools
- Cast Iron Skillet
Wet Ingredients
- 4 eggs, room temperature is best
- 3/4 cup of milk, room temperature is best
Dry Ingredients
- 3/4 cups of all purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 tbs sugar
Additionally for skillet
- 4 tbsp butter, half a stick
- 2-3 apples sliced finely, you'll want to cover the bottom of the skillet
Cinnamon Topping
- 1/2 sugar
- 2 tsp cinnamon
Instructions
Preheat oven to 425°F leave your cast iron pan it to heat up.
While oven is warming mix the dry and wet ingredients separately and then combine them to make the batter
When the pan is up to temp put a half stick of butter in the pan and put it back in the oven.
When the butter is melted and it starts to smell a bit nutty take out the pan, swirl the butter around
Add apples in an even layer on the bottom of the pan, being quick about it but also trying to get them all laying down nicely
There is no point to trying to do a pattern because no one will see it
Then add the batter by pouring starting from the center, but you will likely have to move around because the apples trap the batter
Sprinkle with cinnamon topping as evenly over the top as possible
Bake for 20 to 25 minutes, until golden brown
Don't open the oven while cooking for the baby will sag.
